Strawberry Shortcake – Gluten Free

For me, pound cake is too plain. I like to dress it up with fruit and whipped cream. Making strawberry shortcakes is my favorite thing to do with plain pound cake. This is a delicious low carb pound cake recipe using almond flour which makes it gluten-free. I like to use erythritol and stevia as they are both natural ingredients, but you can substitute about 1 cup of artificial sweetener (Splenda) instead. Either way you slice it, this is one tasty low carb strawberry shortcake.

Strawberry Shortcake – Gluten Free

Make a basic low carb almond flour pond cake fabulous. Simply add some fresh strawberries and a little whipped cream and you've got this tasty gluten free low carb strawberry shortcake.

    For Pound Cake
  1. Cream the butter, cream cheese erythritol, and stevia with an electric mixer. Add the eggs, one at a time; blend in the extracts.
  2. Mix the almond flour and baking powder; add to the egg mixture a little at a time.
  3. Pour into a well-greased 8×4? loaf pan at 325º for 50-55 minutes or until well browned.
  4. Cool 10 minutes, remove from pan.
  5. For Strawberry Shortcake
  6. Slice two pieces of pound cake.
  7. Slice two strawberries.
  8. Place one sliced strawberry on top of bottom cake and top with sugar-free whipped cream.
  9. Repeat for top layer.

    I made this pound cake last night and it is incredible. I left out the lemon and doubled the vanilla… and I didn’t have powdered erythritol so I used crystal erythritol. It is moist and light and delicious. I will definitely make this again. Thanks for the recipe!!
