Quick Cabbage Cole SlawThis is a quick and easy coleslaw that doesn’t have carrots which would increase the carb count. I used a stevia product that has zero carbs. Most of the carbs are from the cabbage and I didn’t deduct for the fiber so using a sweetener with 1-2 carbs will still keep the carb count to about 3 grams per serving.
4 cups cabbage, finely shredded
¼ cup mayonnaise
¼ cup cider vinegar
6 packets stevia or other sugar substitute
1 teaspoon ground celery seed
Mix cider vinegar with stevia (or other low carb sweetener) packets. Whisk in mayonnaise and celery seed until smooth dressing forms. Pour dressing over shredded cabbage. Toss to coat cabbage with dressing.
Carbs per serving: 3 g
